Mixed Vegetable Niramish

Niramish is a vegetarian dish. It is prepared by mixed vegetable. Vegetables are very useful for our health. Vegetable recipes are one of the best recipes of the world. Mixed vegetable niramish is also delicious human diet. It is prepared by many vegetables. Lentil is very helpful to prepare vegetable recipes. Sometimes lentil is added in the mixed vegetable recipes. A few spices are used in it. The spices are mustard, turmeric, cumin, ginger, pepper, panchforan etc. The spices are used to increase the taste of the mixed vegetables recipes. Sometimes a little sugar is added for good taste. Niramish is used as vegetable curry. Everybody likes it because it is the mixer of many vegetables. It can be served for lunch and suffer with rice and bread. The cooking process is as follows;

Ingredients:
  • 100 gm (4 oz) green papaya
  • 100 gm (4 oz) palwals
  • 100 gm (4 oz) aubergine
  • 100 gm (4 oz) white gourd
  • 175 gm (6 oz) pumpkin
  • 2 green bananas
  • 2 pared green chilies
  • 1 teaspoon sugar
  • 2 teaspoons lemon juice
  • 2 tablespoons sliced onion
  • 1 bay leaf
  • 1 teaspoon panchforan
  • ¼ cup cooking oil
  • ¼ teaspoon crushed garlic
  • ½ teaspoon ground turmeric
  • ½ teaspoon chili powder
  • ½ teaspoon ground coriander
  • ½ teaspoon ground cumin
  • ½ teaspoon ground ginger
  • salt to taste
How to prepare:
  1. Peel and cut the vegetables into cubes. In a saucepan place the papaya, palwals, bananas, white gourd, salt and ground spices.
  2. Add water to cover the vegetables. Cook over a moderate heat.
  3. When vegetables are half-cooked, add the aubergine and pumpkin.
  4. Cook till the vegetables are soft.
  5. Add sugar and lemon juice.
  6. In a saucepan heat the oil. Put in the panchfoan, bay leaf, onion, garlic and green chilies.
  7. Stir and fry till the onions are brown.
  8. Add the vegetables, simmer for 1minute. Serve hot with boiled rice or chapatti. Make 8 servings.
