Olive Achar
Olive is one kind of fruit. Olive recipes are famous all over the world. It is suitable for recipe for pickle. We can prepare many kinds of items by olive. Olive Achar is one of them. Olive oil is famous all over the world. Olive contains protein, carbohydrate, vitamin etc. Green olive contains vitamin C. So olive recipes are very delicious. Children are very fond of olive achar. In Bangladesh, olive achar is prepared mostly in the rural areas. We have to arrange green olive,  ground turmeric, cooking oil, ground ginger, garlic, ground coriander, chili powder etc to prepare the olive achar recipe. Its cooking process is very easy. The cooking process of the recipe is given below;

Ingredients:
1 tablespoon salt.
1 kg (2 lb) green olives
1 tablespoon ground turmeric
1 cup cooking oil
1 teaspoon panchforan
1 teaspoon ground ginger
1 tablespoon ground coriander
1 teaspoon ground garlic
1 teaspoon chilli powder
1 tablespoon ground mustard
1 cup vinegar
4 cups sugar or cane molasses
1 tablespoon salt
Cooking Process:
1. wash the olives. Cut both sides. Keep also the middle portion with stone. Rub salt and turmeric on the pieces. Spread o the tray.
2. Keep under bright sun for 1-2 hours. During the time turn over the pieces.
3. Combine the ground spices and mix in 1/2 cup of water.
4. Heat the oil add pancforan.Stir once and add the mixture of spices, fry for  2 minutes. Add olive and vinegar; cover and coo over the heat.
5. When olive is cooked, add the sugar, stir carefully for 3-5 minutes. Remove from heat.
6 Pour hot in a clean jar. leave to cool. Adjust cap.
In this way the olive achar had been prepared.
