Vegetable Curry with Coconut Milk

* 1 small cauliflower
* 2 carrots, sliced
* 1 papaya
* 4 string beans
* 1 teaspoon ginger paste
* 1/2 teaspoon garlic paste
* 1/2 teaspoon ground turmeric
* 1/4 teaspoon chilli powder
* 14 teaspoon ground coriander
* 14 teaspoon ground cumin
* 4-5 cups light coconut milk
* 2green chillies
* 3 tablespoons cooking oil
Salt to taste
Method of preparation:
1. Cut the cauliflower into small florets and the small beans into 4 cm long pieces. Peel and cut the papaya and carrots into 4 cm ×
1/2cm slices. Wash the vegetables and drain the water.
2. In a saucepan fry 2 tablespoons sliced onion until transparent.

4. Add the coconut milk. Bring to boil. Add the papaya,carrot and salt.
5. When papaya and carrot are half cooked, add the cauliflower. Simmer until papaya is tender.
6. Add the string beans and green chillies. Simmer for 7 minutes.
Serve the boiled rice and pullao. 6 servings.
